Beet Power Bowl
My very first Nourish post on O / N / T! I am excited to kick off the year with a new website and a new breakfast. This is my husband Scott's favorite smoothie recipe of all time. He is a lover of the beet. The beet is one powerful, badass vegetable by the way. Beets fight off inflammation, clean out the gut, contain powerful antioxidants, and help the body in a number of ways. Lettuce turn up the beet! Get into all the nerdy gritty science below about this neat ruby red root. Also catch the bonus facts about another mighty ingredient you need to be consuming more often: the dried plum.
RECIPE

INGREDIENTS
1 small beet
1-2 handful of spinach
1/2 cup of fresh or frozen cherries (I used frozen)
1/2 cup of fresh or frozen blueberries
3 dried prunes or plums (I used prunes here)
1 scoop of vega vanilla powder
1/2 cup of unsweetened almond milk (add more as needed)
DESIGN
- Combine all ingredients into a blender.
- Put into a round ceramic bowl.
- Get creative with your favorite toppings.
- Inspiration: granola, toasted almonds, cocnut flakes, goji berries, chia seeds, bee pollen, etc.
At home we love choosing a new smoothie recipe every couple of weeks. It is a great way to start off the week with something new. Starting the morning off on the right foot nutritionally makes a difference on how your day plays out; it also lays the foundation for a great week. Give yourself the gifts of time & silence in the morning to enjoy the first waking breaths by nourishing your body with something satisfying and beautiful!

Just BEET IT! Beets are promoters of optimal health! They are rich in fiber, vitamins, and essential minerals such as potassium and magnesium. Magnesium is great for your bones, liver, and kidney function. Potassium is an excellent source for healthy veins and muscles. Beets are also known to cleanse and detoxify the body because they contain high levels of antioxidants. Beets are one of the healthiest vegetables of all time due to their blood building and blood nourishing properties, which help prevent heart disease. They can help lower high blood pressure and normalize low blood pressure. Cool, right! They help increase oxygen consumption and contain more iron than spinach! PLUMS & PRUNES
Say hello to the dried plum. These are not only fun to eat, but are also filled with loads of nutrients. Full of phytonutrients and antioxidants, the juicy purple plum contains a multitude of damage-preventing substances that are very effective in minimizing the harmful oxidizing free radicals in the body. They have also been shown to reduce the oxygen-based damage to fats, benefiting various cells and molecules. Prunes help increase absorption of iron, which is essential for red blood cell formation. They are rich in potassium, an important element that supports the body in controlling blood pressure and heart rate.
